Gluten-Free Southern Chicken and Dumplings---
In the South, chicken and dumplings are incomparable for comfort food.
When we were first diagnosed with celiac disease one of the hardest things to give up was the "family recipes" that were handed down for generations. We've adapted our delicious recipe to a gluten-free, real deal, Southern-style chicken and dumplings.
INGREDIENTS:
- 2 lbs boneless, skinless chicken thighs
- 2 cups celery, diced
- 8 cups water
- 4 cups chicken broth ready to serve, gluten free
- 5 chicken bouillon cubes, gluten free
- 1 tablespoon salt
- 1 tablespoon pepper
- 1/4 cup corn starch
DIRECTIONS:
- Bring chicken, water, celery, chicken broth, chicken bouillon cubes, salt, pepper to a boil and cook until chicken is tender.
- Remove chicken and shred into bite sized pieces.
- Reduce heat to medium and put shredded chicken back in with the broth, and cook for 20 minutes.
- Remove 1 cup of broth and mix in corn starch, stir vigorously until well blended, and set this aside until later.
- Break the gluten-free lasagna into several pieces and drop into simmering chicken and broth a few at a time.
- Cover and simmer for 30 minutes, stirring often.
- Add combined mixture of broth and corn starch slowly and stir frequently.
- Simmer for 5 minutes.
Voila!! The best Southern Style, Old Fashioned chicken and dumplings ever, and it makes it so much more delicious knowing that it is safe and gluten free.
