Gluten-Free Greek Salami and Feta Quiche---

Sometime savory rich flavors is what we crave,  this gluten-free Greek salami and feta quiche might be my family's new favorite. It has endless possibilities and is so easy to make. In addition it reheats well in the microwave for a quick snack for the kiddos.

 

A quiche is basically an egg and milk custard filled with all sorts of other things (usually cheese and vegetables), but this recipe really vamps up the flavor. This recipe is for 2 pies, however, if you only want one pie (why would you) then half the recipe.

Let's make some quiche!

INGREDIENTS:

  • 2 8 oz.gluten free hard salami or pepperoni, diced
  • 2 c. mild cheddar cheese, shredded
  • 2 4 oz. traditional crumbled feta cheese
  • 1 c. Kalamata pitted olives, diced
  • 1 jar 12 oz. roasted red peppers, drained and diced
  • 2 c. baby spinach, diced
  • 8 eggs
  • 2 c. milk
  • 2 gluten-free pie crusts, (9 in.) (we used Wholly Wholesome)
  • 1 tsp. salt
  • 1 tsp. pepper

DIRECTIONS:

  • Heat oven to 375. Line bottom of gluten-free pie shell with cheddar cheese.

  •  Cut salami or pepperoni into small pieces and layer on top of cheddar cheese

 

  • Dice and layer baby spinach on top of filling ingredients.

 

  • Drain and dice roasted red peppers and layer on top. 

 

  • Add feta to top of ingredients.

 

  • Dice olives and top off filling ingredients.

 

  • Whisk eggs, milk, salt, and pepper. Carefully pour mixture on top of filling ingredients.

 

Put pies on pan covered with parchment paper, and bake on 375 for 35 to 40 minutes until center is almost set but jiggles a little when gently shaken. Remove and let stand for 10 minutes. Cut into wedges and serve.

VIOLA!
