Gluten-Free Wonderfully Simple Chocolate Pie---

Gluten-Free Wonderfully Simple Chocolate Pie---

This lush chocolate pie is exquisitely simple. It is simply plain old chocolate pie; no added fruit, nuts, creams, or toppings. This nostalgic pie takes us back to a time when things were slower and wonderfully simple. The recipe is at least thirty years old, and I remember the  ladies in our community making this for a special treat. We have modified it to make it gluten-free and it is fabulous.

Let's make some gluten-free plain and simple chocolate pie!

INGREDIENTS:

  • 1/2 cup unsweetened cocoa
  • 6 tbsp. cornstarch
  • 4 egg yolks
  • 1 1/2 cup cane sugar
  • 1/4 tsp. salt
  • 2 (12 oz.) cans evaporated milk, whole
  • 2 tbsp. vanilla bean paste or extract
  • 2 tbsp. butter
  • 1 (9 in.) gluten-free frozen pie shell

DIRECTIONS:

  • Preheat oven to 350 degrees F.
  • With a fork, poke holes into frozen pie shell, and bake for 20 minutes. Set aside to cool.

  • In a medium mixing bowl, sift cocoa, sift cornstarch, add sugar and salt. Whisk thoroughly. 

  •  Add beaten egg yolks and vanilla.

  • Pour mixture into medium pot, then add milk gradually while stirring over medium to high heat.

  •  Continue until the mixture comes to a slow boil (about 5 to 10 minutes), cook until thick like pudding, add butter and whisk (briskly) until smooth.

  • Pour into prebaked cooled gluten-free pie shell. Refrigerate to chill.
