Gluten-Free Wonderfully Simple Chocolate Pie---
This lush chocolate pie is exquisitely simple. It is simply plain old chocolate pie; no added fruit, nuts, creams, or toppings. This nostalgic pie takes us back to a time when things were slower and wonderfully simple. The recipe is at least thirty years old, and I remember the ladies in our community making this for a special treat. We have modified it to make it gluten-free and it is fabulous.

INGREDIENTS:
- 1/2 cup unsweetened cocoa
- 6 tbsp. cornstarch
- 4 egg yolks
- 1 1/2 cup cane sugar
- 1/4 tsp. salt
- 2 (12 oz.) cans evaporated milk, whole
- 2 tbsp. vanilla bean paste or extract
- 2 tbsp. butter
- 1 (9 in.) gluten-free frozen pie shell
DIRECTIONS:
- Preheat oven to 350 degrees F.
- With a fork, poke holes into frozen pie shell, and bake for 20 minutes. Set aside to cool.
- In a medium mixing bowl, sift cocoa, sift cornstarch, add sugar and salt. Whisk thoroughly.
- Add beaten egg yolks and vanilla.
- Pour mixture into medium pot, then add milk gradually while stirring over medium to high heat.
- Continue until the mixture comes to a slow boil (about 5 to 10 minutes), cook until thick like pudding, add butter and whisk (briskly) until smooth.
- Pour into prebaked cooled gluten-free pie shell. Refrigerate to chill.
