Rosemary and Sweet Potato Medallions (Gluten-Free, Paleo, Dairy Free, Vegan)

Rosemary and Sweet Potato Medallions (Gluten-Free, Paleo, Dairy Free, Vegan)---

Rosemary Sweet Potatoes baked in Extra Virgin Olive Oil is a healthy and flavorful side dish that is full of vitamins and minerals and super easy to prepare (only three ingredients). They are addictive!

Let's make some Rosemary Sweet Potato Medallions!  

INGREDIENTS:

  • 4 large sweet potatoes
  • 1 cup olive oil
  • Rosemary, crushed

DIRECTIONS:

  • Preheat oven to 400 degrees F.
  • Peel sweet potatoes, slice into 1/4 to 1/2 inch medallions.

  • In a gallon freezer bag, add sweet potato medallions and olive oil and seal. Shake gently until all medallions until all are coated with the olive oil. Pour onto a medium baking sheet and spread in an even layer.

  • Sprinkle with Rosemary to taste. Bake for 15 minutes.

 

  • Remove from oven, flip over, sprinkle Rosemary to taste. Cook 10 minutes.
