Gluten-Free Hearty Beef Stew---
Most folks growing up in the south have a beef stew recipe, and everyone's beef stew is different. My Mom's recipe, my Big Granny's recipe, my Grandmother's recipe......(you get the picture) is different. The problem is NOT the difference in recipes, they were all delicious, but that EVERY recipe contains gluten! They all thicken with flour. This recipe uses cornstarch to thicken the beef stew. Cornstarch has a sweet, mild flavor that blends well with potatoes and vegetables
Let's make some beef stew!
INGREDIENTS:
- 3 lbs. beef stew meat, cut into bite-sized cubes
- 3 c. red potatoes, diced
- 3 c. carrots, diced
- 1 stalk celery, diced
- 1 large onion, cut into large pieces
- 1/2 c. oil
- 6 c. water + 1 c. water
- 2 packets gluten-free beef stew seasoning mix (we used McCormick gluten-free beef stew seasoning mix)
- 1 c. corn starch
- 1 tbs. salt + 1 tsp. salt
- 1 tbs. pepper + 1 tsp. pepper
DIRECTIONS:
- In a large pot heat oil over high heat, add meat and cook until browned on all sides, about 3 to 5 minutes.
- Add onion and saute until almost translucent.
- Add 6 cups of water, 2 packets of gluten-free beef stew seasoning, 1 tbs. pepper, 1 tbsp. salt and cook on high for 30 minutes.
- Add potatoes, carrots, and celery and simmer on medium to high for an hour or until vegetables are tender.
- Make a slurry with the cornstarch by mixing 1 c. water with 1 c. cornstarch and whisking until smooth.
- Add cornstarch mixture to stew slowly, stirring the stew continuously for at least one minute, simmer for at least 10 minutes while the cornstarch thickens the mixture.
VOILA!!
We have hearty beef stew!
