Coconut Rum Pecan Chocolate Pie (GF)

Gluten-Free Coconut Rum Pecan Chocolate Pie (Oh my!)---

Perfect for the holidays, this decadent pie takes a classic to an entirely different level. The coconut rum is so yummy combined with the chocolate and pecans!

In addition, it's gluten-free!

Let's make some pie!


INGREDIENTS:

  • 2 9-inch gluten-free frozen pie crust
  • 2 cups dark corn syrup
  • 1 cup butter
  • 1 cup cane sugar
  • 8 large eggs
  • 3/4 cup coconut rum
  • 1/4 cup salt
  • 2 cups semi-sweet chocolate chips
  • 2 cups whole pecans 

DIRECTIONS:

  • Preheat oven to 325 degrees F.
  • In a sauce pan over medium heat, combine the sugar, butter, corn syrup, rum, chocolate chips, and salt. Heat until the butter melts and the sugar dissolves. Set aside to cool. 

  • In a medium mixing bowl, whisk the eggs and slowly add the chocolate mixture. Whisk constantly, then add the pecans. 

  • Pour the mixture into the pie shells. Bake for 50 minutes.
