Gluten-Free Coconut Rum Pecan Chocolate Pie (Oh my!)---
Perfect for the holidays, this decadent pie takes a classic to an entirely different level. The coconut rum is so yummy combined with the chocolate and pecans!
In addition, it's gluten-free!

INGREDIENTS:
- 2 9-inch gluten-free frozen pie crust
- 2 cups dark corn syrup
- 1 cup butter
- 1 cup cane sugar
- 8 large eggs
- 3/4 cup coconut rum
- 1/4 cup salt
- 2 cups semi-sweet chocolate chips
- 2 cups whole pecans
DIRECTIONS:
- Preheat oven to 325 degrees F.
- In a sauce pan over medium heat, combine the sugar, butter, corn syrup, rum, chocolate chips, and salt. Heat until the butter melts and the sugar dissolves. Set aside to cool.
- In a medium mixing bowl, whisk the eggs and slowly add the chocolate mixture. Whisk constantly, then add the pecans.
- Pour the mixture into the pie shells. Bake for 50 minutes.
