Gluten-Free Ratatouille  Kielbasa Pasta Bowl----

This is a meal stocked full of delicious veggies...eggplant, zucchini, squash, tomato, onion, and bell pepper. This dish is smothered in a wonderful tomato sauce gussied up with Italian Herbs and Kielbasa. We topped this dish off with Parmesan and Romano cheese! Yes, please!

Let's make some Gluten-Free Ratatouille Pasta Bowls!!

INGREDIENTS:

  • 2 medium eggplant
  • 2 medium yellow squash
  • 3 zucchini
  • 6 Roma tomatoes
  • 1 cup Vidalia onion,diced
  • 2 bell pepper, diced (we used green and red)
  • 1 cup Extra Virgin Olive Oil + 2 tbsp. Extra Virgin Olive Oil
  • 2 tbsp. Herbs de provence spice mix
  • 1 tbsp. sweet basil
  • 1 (12 0Z.) Kielbasa
  • 2 tsp. salt + 1 tsp. salt
  • 1 tsp. pepper + 1 tsp. pepper
  • 2 (24 oz.) pasta sauce, we used Classico Traditional Sweet Basil Pasta Sauce, this is designated gluten free
  • 1 (29 oz.) puree tomatoes
  • 2 (5 oz.) Parmesan and Romano Cheese, grated
  • 2 (12 oz.) Gluten Free Rotini

DIRECTIONS:

  • Preheat oven to 375 degrees F.
  • Slice the squash, zucchini, tomatoes, eggplant into approximately 1/4 inch rounds. Set these aside.

  • In a large baking pan, pour the cup of olive oil to coat the bottom of pan. Alternate the eggplant, squash, tomato, and zucchini. Season with 1 tsp. salt and 1 tsp. pepper. Set aside.

  • In a 12 inch pan, heat the 2 tbsp. of olive oil on medium heat. Saute the onions and peppers. Season with basil, salt, pepper, and Herbs de provence spice. Add the pasta sauce, tomato puree, and kielbasa. Simmer on low for 15 minutes.

  • Pour tomato sauce mixture over the pan of assorted vegetables. Smooth. Cover with the Parmesan and Roman cheeses. Cover in tin foil. Cook for 45 minutes.

  • Cook gluten free pasta according to instructions. Set aside.

VIOLA!  

We have Gluten Free Ratatouille Kielbasa Pasta Bowl. The Ratatouille is served over the pasta in a bowl. Garnish with Parmesan Cheese. ENJOY!
