Summer Corn Chowder {Gluten-Free, Dairy Free}---

Fall is upon us, and the nights are a little nippy Nothing could be better than chowder. The corn is fresh and oh, so delicious and sweet. We found this organic sweet corn at the local market. This recipe is relatively easy, and so satisfying. There is basically some prep, like dicing potatoes and shucking the corn to cut it off the cob.  Full of wonderful veggies, this is the yummiest summer chowder ever. One extra, extra bonus.....it is gluten free and dairy free!

Let's make some Gluten Free Dairy Free Summer Corn Chowder!

INGREDIENTS:

  • 6 medium ears fresh sweet corn, shucked 
  • 2 medium Vidalia onions, diced
  • salt pork, sliced
  • 2 lbs red potatoes, cubed 1/2 inch pieces
  • 1/4 gluten-free all purpose flour
  • 1 1/2 cup Almond milk
  • 7 cups water + 1 cup water
  • 2 tsp. salt
  • 2 tsp. black pepper
DIRECTIONS:
  • In a large pot, fry the salt pork on medium heat, stirring occasionally until the drippings are coating the bottom of the pan (about 4 or 5 minutes). Add 1 cup of the water and bring to full boil. Add the onions, stirring frequently until the onions are translucent, about 10 minutes.
  • While this is simmering, cut the kernels off the cob, set aside.

  • Add the remaining 7 cups of water and bring to boil, adding the diced potatoes,corn, salt, and pepper. Reduce heat to medium and simmer until potatoes are tender, around 35 to 40 minutes.

  • .In a small bowl, combine the Almond milk and the flour, whisk well.  Stir in the milk/flour mixture and bring to just a boil. Remove from heat. 

 VIOLA!
