Gazpacho--- (GF, Vegan)---

Gazpacho is a cold soup made from raw veggies.....just think summer salad in a blender. This soup is full of flavor and so easy to make, it can be refrigerated to enjoy for days. Most recipes call for more tomatoes to cucumbers, but we love cukes so we made it about the same amount. This is a wonderful go to summer meal.

Let's make some Gazpacho!!

INGREDIENTS:

  • 8 whole Roma tomatoes
  • 6 whole cucumbers
  • 1 red onion
  • 5 stalks celery
  • 1 large red pepper
  • 4 fresh Basil leaves, diced
  • 8 cups Tomato juice, we used V8 Original
  • 4 tbsp. garlic, minced
  • 3/4 cup Extra Virgin Olive Oil
  • 1/4 Cup Balsamic Vinegar
  • 1/4 cup sugar
  • 1/4 cup Worcheshire 
  • 3 tbsp. salt
  • 2 tbsp. pepper

DIRECTIONS:

  • Dice celery.

  • Dice red pepper.

  • Cut cucumber in half, scoop out seeds. Cut cucumber lengthwise into thin strips then dice. 

  • Dice up ripe Roma tomatoes.

  • Peel red onion and dice.

  • Dice four leaves of fresh Basil.

  • Finally, we have all these beautiful, fresh vegetables diced and ready for the food processor or blender.

  • In the blender, combine the ingredients in small batches. Combine 1/4 to 1/2 of the tomatoes, cucumber, onion, bell pepper, basil, celery, tomato juice, Worcheshire, olive oil, vinegar, sugar, salt, pepper, and garlic. 

 

  • Pulse until ingredients are well blended.  Set aside in a large mixing bowl.
  • Repeat until all veggies and ingredients are well blended. Add to the mixing bowl.
  • Stir, check for seasoning, add salt and pepper if needed.
  • Refrigerate for at least an hour.
  • Remove from fridge, stir. Ladle into bowls.

VIOLA!!

We have gazpacho!!

Garnish with sour cream. Have hot sauce ready for anyone that likes it hotter.
