Gluten-Free Cowboy Cookies---
Cowboy Cookies, strange name for an unbelievably decadent treat. These cookies are made from oatmeal, chocolate chip, coconut, cereal, and pecans.......pretty much everything but the kitchen sink...... which, by the way, is another name for this treat. By whatever name, these cookies are amazing!!
Let's make some Cowboy/Cowgirl Cookies!!
INGREDIENTS:
- 2 sticks salted butter, softened
- 2 eggs
- 1 cup brown sugar, packed
- 1 tbsp. vanilla extract
- 1/2 cup sugar
- 2 cups gluten-free oats, we used Bob's Red Mill Gluten-Free Quick Cooking Oats
- 2 cups gluten-free all-purpose flour
- 2 tsp. baking soda
- 1 (12 oz.) bag semi-sweet chocolate chips
- 1 1/2 cups Gluten-Free Special K cereal
- 1 1/2 cup sweetened shredded coconut
- 1 cup pecans, chopped
DIRECTIONS:
- Preheat oven to 350 degrees F.
- In a medium mixing bowl, combine eggs, sugar, brown sugar, vanilla, and butter. Mix on medium to high until well combined and creamy.
- Add flour, baking soda, and oats. Mix well.
- Add chocolate chips, coconut, cereal, and pecans. Mix well with a spatula.
- Roll into 1 to 2 inch round balls with your hands or with a large cookie scoop. Place on a greased cookie sheet or a cookie sheet covered with parchment paper. Chill the round cookie dough for 15 minutes. Bake for 10 to 12 minutes. Do not overcook, they will harden as they cool.
