Gluten-Free Italian Pasta Salad

Gluten-Free Italian Pasta Salad---

The temperatures are dangerously hot outside, and nothing hot sounds good to eat. This Italian pasta salad is perfect for days like today. It has fresh mozzarella, fresh veggies, cold pasta, and cold cuts, all marinated with Italian dressing to make this dish super easy and good. The best part of this pasta salad is that it can be made the day before and chilled in the refrigerator, the longer this dish marinades that better it gets. 

Let's make some Italian Pasta Salad!

INGREDIENTS:

  • 2-- 16 oz. boxes gluten free pasta (we used Tinkyada Gluten Free Brown Rice Pasta Spirals)
  • 3 cups fresh mozzarella (we used Bel Gioiosa it stipulated gluten free)
  • 2 cups cumber, diced
  • 2--10 oz. packages of grape tomatoes
  • 8 oz. Italian Dry Salami (we used Busseto it stipulates gluten free)
  • 6 oz. pepperoni
  • 2--16 oz. Italian Dressings
  • 1 tsp. salt
  • 1 tsp. pepper
  • Garnish with Parmesan cheese

DIRECTIONS:

  • Cook pasta according to directions, drain and rinse, let cool and put into large mixing bowl.

    •  Add cucumbers, tomatoes, pepperoni (make sure to separate), salami (we cut these in half), mozzarella, and Italian Dressing, salt, and pepper. Toss thoroughly and chill for an hour.

    VIOLA!

    Garnish with Parmesan cheese and serve chilled!
