Gluten-Free Summer Tomato Pie

Gluten-Free  Summer Tomato Pie--

Hailing from the south, we love to find recipes to use our fresh, summer vegetables. Tomato pie is a wonderful way to use those garden tomatoes of the season.  Whether for dinner or quick lunches, these delicious pies are worth the effort. What is not to love about these  yummy pies-- Fresh tomatoes? Gluten free pie crust? Gooey cheese?

Let's make some gluten-free tomato pie!

INGREDIENTS:

  • 2--9 inch gluten free pie shells 
  • 4 summer tomatoes
  • 1 large vidallia onion, diced
  • 8 oz. mozzarella cheese, shredded
  • 8 oz. cheddar, shredded
  • 1 cup mayo
  • 4 oz. basil stir in paste (or fresh basil)
  • 1 tbsp. pepper
  •  salt to sprinkle on tomatoes  
  • dash of olive oil

DIRECTIONS:

  • Preheat oven to 350 degrees F.
  • Peel and cut tomatoes into bite size pieces. Place in colander in the sink, and sprinkle with salt to release excess moisture (about 15 minutes). Press tomatoes in the colander to drain the extra water, or pat dry with a paper towel.

  • In a frying pan with a little olive oil, saute onions until transparent. Layer bottom of pie shell with sauteed onions.

  • Layer tomatoes on the onions. Squeeze basil on the tomatoes and spread evenly, or layer with fresh basil.

  • In a small mixing bowl, combine the mayo, mozzarella, cheddar, and pepper. Mix thoroughly and layer the cheese mixture in the pie. Bake for 30 minutes until the cheese is bubbly and brown.

VIOLA!
